Beet Greens Recipe


2 Bunches beet greens
1 tbs olive oil
2 cloves garlic (minced)
salt to taste
juices of one lemon

Step 1
Add beet greens to boiling water and cook uncovered until tender, about 2 minutes. Drain  and immerse in cold water to stop the cooking process. Once cold, drain well and coarsely chop.

Step 2
Heat olive oil in a large skillet over medium heat. Stir in garlic and cook until fragrant. Stir in greens to coat evenly with oil and garlic. Season with salt and pepper. Cook until hot. Remove to a platter, add lemon juice.
