More Tomatoes than Time Sauce

Prepare Roma tomatoes by washing and removing stem, stem scar and any blemishes, cut the tomatoes in half

Place in a large pot with just enough water to prevent burning or sticking while the tomatoes are softening

Once they have softened a bit, add the following for each liter (approximately) of softened tomatoes:

  • 1/2 hungarian hot wax pepper
  • 1 tsp kosher salt
  • 1/4 cup organic extra virgin olive oil
  • Small handful of fresh oregano and basil
  • 2 large cloves of fresh organic garlic

Simmer as long as you can then remove any herb stems and tomato skins that have not broken down (or eat them, they are full of phytochemicals and antioxidants!)
